Ingredients

  • 20 oz refrigerated three cheese tortellini
  • 2 Tbsp extra virgin olive oil
  • 1 medium yellow onion, chopped
  • 2 ears corn, kernels cut from cobs (or 2 cups frozen corn)
  • 2 cups grape tomatoes
  • 2 medium zucchini, sliced into 1/4-inch thick half moons
  • 3 garlic cloves, minced
  • 1 1/4 cups marinara sauce
  • 1/4 cup chopped fresh basil
  • 1/4 cup chopped fresh parsley
  • 1/2 cup finely shredded parmesan cheese, divided
  • Salt and freshly ground black pepper, to taste

Instructions

  1. Bring a large pot of lightly salted water to a boil. Cook tortellini one minute shy of package instructions. Reserve 1/4 cup pasta water before draining.
  2. In a large skillet, heat olive oil over medium-high heat. Sauté chopped onion for 3 minutes.
  3. Add corn and sauté for 2 more minutes.
  4. Add grape tomatoes and sauté for another 3 minutes until tomatoes begin to blister.
  5. Add zucchini and minced garlic. Cook until vegetables are tender and tomatoes begin to burst, about 6 minutes.
  6. Reduce heat to low. Add drained tortellini and marinara sauce to the skillet. Toss to combine.
  7. Add a splash of reserved pasta water if needed. Season with salt and pepper to taste.
  8. Stir in 1/4 cup parmesan cheese, chopped basil, and parsley.
  9. Serve immediately, topped with remaining parmesan cheese.

Notes

  • Use fresh, refrigerated tortellini for best texture and flavor.
  • Don’t overcook the vegetables to preserve their color and crunch.
  • A splash of pasta water helps loosen the sauce if it’s too thick.
  • For added creaminess, stir in 1/2 cup of heavy cream with the marinara sauce.
  • Customize with your favorite protein or vegetables.
