That could have been the problem with the ganache--it had been a long day of baking, so there was probably some impatience going on with my helpers in the kitchen. They are great. Not sure what happened with your ganache...I made these several times and it was always fine. I find if you put it in the refrigerator and keep checking it will help the ganache to stiffen up a bit. Anyways, these are fabulous cookies. I remember being consulted a time or two. ;-) They were very tasty though, you're right. I've been thinking they could be turned into Mint Milanos very easily. Just do the ganache and chocolate between two thinner cookies. May experiment when I get around to holiday baking. @ Mom
